Ingredients
- 4 large potatoes, peeled and cut into strips
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup milk
- 1 egg
- 1 quart vegetable oil (for frying)
- 1 ½ lbs cod fillets (or haddock/pollock)
Instructions
1. Prepare the Chips (Fries)
- Place sliced potatoes in a bowl of cold water (removes excess starch).
- Heat oil to 350°F (175°C).
- Drain potatoes and dry well with paper towels.
- First fry: Cook potatoes for 5 minutes until just tender.
- Remove and drain on paper towels.
2. Make the Batter
- Mix flour, baking powder, salt and pepper in a bowl.
- Add milk and egg.
- Mix until smooth and let rest for 20 minutes.
3. Fry the Fish
- Pat fish fillets completely dry.
- Dip each fillet into the batter.
- Carefully place in hot oil.
- Fry until golden brown on all sides.
- Remove and drain on paper towels.
4. Finish the Chips
- Return the partially cooked chips into the hot oil.
- Fry again until crispy and golden.
- Drain and season with salt.
Tips for Best Results
- Keep fish cold and dry for extra crispiness.
- Soak chips in ice water for a crispier result.
- Maintain oil temperature at 350°F (175°C).
