The creamy béchamel-style sauce combined with cheese likely evolved as a British adaptation of European cooking techniques, using locally available ingredients such as cheddar cheese.

Cauliflower itself has a mild flavor, which makes it the perfect base for a rich cheese sauce. The sauce coats each floret, soaking into the little crevices and turning a simple vegetable into something indulgent and comforting.

A strong, mature cheddar is essential. Mild cheese can get lost in the sauce, while sharp cheddar adds depth and character. A small amount of mustard gives the sauce a gentle kick and enhances the cheese flavor without overpowering the dish.

Step-by-Step Instructions

1. Prepare the Cauliflower

Cut the cauliflower into evenly sized florets. Keeping them similar in size helps them cook evenly. Bring a pot of salted water to a boil, add the cauliflower, and cook for 3–5 minutes until just tender. The florets should still have a slight bite.

Drain well and transfer the cauliflower to a baking dish, arranging it in a snug single layer or lightly stacked.

2. Make the Cheese Sauce

Preheat the oven to 400°F (200°C).
In a saucepan over medium heat, melt the butter. Once melted and bubbling gently, add the flour and stir continuously for about one minute to form a smooth paste.

Gradually add the milk, a little at a time, stirring well after each addition to prevent lumps. Allow the sauce to thicken slightly, then add the mustard and black pepper.

Remove the saucepan from the heat and stir in about two-thirds of the grated cheese, reserving the rest for the topping.

3. Assemble the Dish

Pour the cheese sauce evenly over the cauliflower, making sure all the florets are well coated. Sprinkle the remaining cheese over the top.

4. Bake

Place the dish in the oven and bake for 25 minutes, or until the top is lightly golden and bubbling. Let it rest for a few minutes before serving.
