This Creamy Dessert in a Glass is a beautiful, spoon-by-spoon delight made with buttery toasted crumbs and a smooth, custard-style cream. It’s simple to prepare, yet looks elegant enough for dinner parties, family gatherings, or special occasions. Each layer brings a perfect balance of crunch and creaminess, making it impossible to resist.


Ingredients

For the Crumb Layer

  • 1½ cups all-purpose flour (180 g)
  • 1½ tablespoons sugar
  • 1 pinch of salt
  • 8½ tablespoons cold butter (120 g), grated

For the Cream Layer

  • ¼ cup + 1 teaspoon sugar (60 g)
  • 2 egg yolks
  • 1¼ cups milk (300 ml, any fat content)
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter (30 g)

Optional Toppings

  • Fresh berries (strawberries, raspberries, blueberries)
  • Grated or shaved chocolate
  • Powdered sugar
  • Chopped nuts
  • Caramel or chocolate drizzle

Step-by-Step Instructions

Step 1: Make the Crumb Layer

Combine the dry ingredients
In a medium bowl, mix together the flour, sugar, and a pinch of salt until evenly combined.

Add the butter
Grate the cold butter directly into the bowl. Using a fork or your fingertips, gently rub the butter into the flour mixture until it resembles coarse, sandy crumbs.

Toast the crumbs
Transfer the crumb mixture to a dry non-stick skillet. Toast over low heat, stirring continuously, for about 5–7 minutes, or until the crumbs turn golden brown and release a rich, buttery aroma.

Cool completely
Spread the toasted crumbs onto a plate or tray and allow them to cool completely. This step is important to keep the crumbs crisp when layered.


Step 2: Prepare the Cream Layer

Whisk egg yolks and sugar
In a saucepan (off the heat), whisk together the egg yolks and sugar until the mixture becomes pale, smooth, and slightly thick.

Add milk and flour
Slowly pour in the milk while whisking continuously. Sift in the flour to prevent lumps and whisk until fully smooth.

Cook the cream
Place the saucepan over low heat. Cook the mixture while stirring constantly, making sure it doesn’t stick to the bottom. After 8–10 minutes, the cream will thicken to a smooth, custard-like consistency.

Finish with butter
Remove the saucepan from the heat and stir in the butter until completely melted and glossy.

Cool the cream
Let the cream cool to room temperature before assembling. This helps the layers set beautifully.


Step 3: Assemble the Dessert

Start with crumbs
Spoon a generous layer of toasted crumbs into the bottom of serving glasses or dessert cups.

Add the cream
Spoon or pipe a layer of cooled cream over the crumbs, smoothing the top gently.

Repeat the layers
Continue layering crumbs and cream until the glasses are filled. Finish with either a cream layer or crumbs, depending on your presentation preference.

Chill to set
Refrigerate the assembled desserts for at least 1 hour so the flavors can meld and the dessert can firm up.

Garnish before serving
Just before serving, decorate with fresh fruit, chocolate, nuts, or a light dusting of powdered sugar.


Storage Tips

  • Store in the refrigerator for up to 3 days
  • Cover with plastic wrap to prevent drying
  • Freezing is not recommended, as the cream may separate
