- 1 lb large shrimp, peeled and deveined
- 1 avocado
- 1 cup frozen corn (thawed)
- 1/2 cup red onion, finely chopped
- 1 jalapeño, finely chopped
- 1 green onion, chopped
- 5/16 cup fresh coriander (cilantro), chopped
- 1 lime, juiced
- 1 tbsp lemon juice
- 1 clove garlic
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
- 1 tsp paprika
- 1/2 tsp salt
- 1 pinch salt (for salsa)
- 1 pinch sesame seeds (for garnish)
Directions
First, prepare the shrimp. In a bowl, toss the shrimp with olive oil, paprika, garlic powder, salt, and black pepper. Mix well so the shrimp are evenly coated with the spices. Heat a grill pan or skillet over medium heat and cook the shrimp for about 2–3 minutes on each side, or until they turn pink and opaque. Remove from heat and set aside.
Next, make the zesty corn salsa. In another bowl, combine the corn, chopped red onion, jalapeño, green onion, coriander, lime juice, and a pinch of salt. Mix everything together well and let it sit for a few minutes so the flavors can combine.
Now prepare the garlic sauce. In a small bowl, mix mayonnaise, sour cream, minced garlic, lemon juice, cayenne pepper, and a pinch of salt. Stir until smooth and creamy.
Cut the avocado into slices or cubes.
