Making gluten-free artisan bread at home may sound difficult, but with the right ingredients and method, it’s actually very achievable. This rustic, crusty gluten-free bread has a golden exterior, a soft yet hearty crumb, and a beautiful artisan shape. Every loaf is unique, just like traditional bakery bread.

This recipe gives you two baking methods depending on the liquid you use:

✔️ With a pan (using milk or bubbly liquids)

Dry Ingredients

  • 3 cups (405 g) gfJules® Gluten Free All-Purpose Flour
  • ¼ cup flaxseed meal
    (or gfJules Gluten-Free Multigrain Baking Flour)
  • ¼ cup dry milk powder (dairy or non-dairy, such as coconut milk powder)
    (Almond meal can be used in an emergency)
  • ½ teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon sea salt

Wet Ingredients

  • 1 teaspoon apple cider vinegar
  • 2 tablespoons honey, agave nectar, or coconut palm nectar
  • 1¼ cups room-temperature liquid (choose ONE):
    • Plain yogurt (best for no-pan baking)
    • Whole milk (not skim)
    • Sparkling water
    • Ginger ale
    • Gluten-free beer
      (Bubbly liquids give a lighter crumb but need pan support)
  • ¼ cup extra-virgin olive oil
  • 2 large eggs
    OR
    2 tablespoons flaxseed meal + 6 tablespoons hot water (rest 10 minutes)
  • 2¼ teaspoons gluten-free rapid-rise yeast
    (1 packet – Red Star Quick Rise recommended)

Optional Toppings

  • Sesame seeds or flaxseeds
  • Coarse sea salt
  • Egg wash (1 egg + 1 Tbsp water) for darker crust
  • Olive oil for brushing

🥣 STEP-BY-STEP INSTRUCTIONS


Step 1: Prepare the Dry Ingredients

In a large bowl, whisk together:

  • Gluten-free flour
  • Flaxseed meal
  • Dry milk powder
  • Baking soda
  • Baking powder
  • Sea salt

Mix very well so everything is evenly distributed. Set aside.


Step 2: Prepare the Wet Ingredients

In the bowl of a stand mixer (or a large mixing bowl), add:

  • Honey
  • Yogurt or chosen liquid
  • Apple cider vinegar
  • Olive oil
  • Eggs or prepared flax mixture

Mix until smooth.


Step 3: Combine Everything

Slowly add the dry ingredients into the wet mixture while mixing with a paddle attachment or spoon.
Once combined, add the yeast and beat for 2–3 minutes until the dough is smooth and thick.


🥖 METHOD 1: USING YOGURT (NO PAN – TRUE ARTISAN STYLE)

This method gives the most rustic artisan look.

  1. The dough will be thick and firm, similar to wheat bread dough.
    If it feels too dry, add milk 1 tablespoon at a time.
  2. Lightly flour your counter and gently shape the dough into a round ball.
  3. Place dough into a proofing basket, bowl, or parchment-lined glass bowl.
  4. Cover loosely with oiled parchment or a towel.
  5. Let rise in a warm place for 30–60 minutes.
  6. Preheat oven to 350°F (static) or 325°F (convection).
  7. Gently flip dough onto a parchment-lined baking sheet.
  8. Brush top with oil or egg wash and lightly dust with flour.
  9. Score the top with a wet serrated knife or bread lame.
  10. Optional: spritz with water for extra crust.
  11. Place a pan with ice cubes on the lower oven rack.
  12. Bake for 30–40 minutes, until internal temperature reaches 200°F.
  13. Remove and cool completely on a wire rack.

🥧 METHOD 2: USING MILK OR BUBBLY LIQUIDS (PAN METHOD)

This method creates a lighter crumb but needs support.

  1. Dough will be batter-like, not firm.
  2. Line a deep oven-safe bowl, Pyrex dish, or springform pan with oiled parchment.
  3. Pour dough into pan and smooth the top with a wet spatula.
  4. Cover loosely and let rise 30–60 minutes.
  5. Brush with oil or egg wash and dust lightly with flour.
  6. Score the top and spritz with water if desired.
  7. Preheat oven to 350°F (static) or 325°F (convection).
  8. Place ice cubes in a pan on the lower rack.
  9. Bake 15 minutes, then lift bread out using parchment.
  10. Place bread on a baking sheet and bake 20–25 more minutes.
  11. Internal temperature should be at least 200°F.
  12. Cool on a wire rack for 10–20 minutes before slicing.

📝 IMPORTANT NOTES

  • Yogurt thickness varies—very thick yogurt needs extra liquid.
  • Dough should never be dry or stiff.
  • Gluten-free bread must cool fully before slicing.
  • Every loaf looks different—this is normal and beautiful!
