🥩 Ingredients
🔸 “Breadcrumbs”
- 2.5 oz pork rinds (crushed)
- 2 oz cheese (grated)
🔸 “Mac”
- 2 eggs
- 1 lb ground chicken
- Salt (to taste)
- Ghee or butter (for frying)
🔸 Cheese Sauce
- 6 oz cheese
- 1 cup milk or cream
- 2 tsp yellow mustard (optional)
- 1 tbsp lemon juice (optional)
- Salt (to taste)
🔸 Garnish (optional)
🍳 Instructions
1. Make “Breadcrumbs”
- Crush pork rinds into fine powder (blender works best)
- Mix with grated cheese
- Set aside
2. Make the “Mac”
- Blend:
- Blend until it becomes a smooth paste
- Put mixture into a plastic/freezer bag
- Cut a small hole in one corner (like piping bag)
- Heat ghee in a pan
- Squeeze small pieces into pan
- Fry until golden brown (about 1–2 mins per side)
- Transfer cooked pieces into a baking dish
3. Make Cheese Sauce
- Heat milk/cream until it starts boiling
- Add cheese slowly while stirring
- Add:
- Mustard (optional)
- Lemon juice (optional)
- Salt
- Stir until smooth, then remove from heat
4. Assemble
- Pour cheese sauce over the chicken “mac”
- Sprinkle breadcrumb mixture on top
5. Bake
- Preheat oven to 200°C (400°F)
- Bake for 10 minutes
6. Broil (Important 🔥)
- Turn oven to broil
- Cook for 30–60 seconds until top is crispy
⚠️ Watch closely — it burns fast!
7. Serve
- Let cool for 10–15 minutes
- Add chives (optional)
- Serve fresh and enjoy 😋
💡 Tips
- Sauce may look watery before baking — that’s normal
- For strict carnivore: skip mustard, lemon, and chives
- You can use beef instead of chicken for stronger flavor
