Step 1: Cook the Beets
Wash beets thoroughly. Place them in a large pot and cover with water.
Bring to a boil and cook for 25β30 minutes until tender.
Step 2: Cool & Peel
Drain and transfer to cold water.
Peel off the skins and cut into slices or cubes.
Step 3: Fill the Jars
Add beets into clean jars.
Divide sliced onion into each jar.
Step 4: Make the Brine
In a saucepan, combine vinegar, water, sugar, and salt.
Add peppercorns, cloves, cinnamon, and garlic.
Heat and stir until sugar dissolves.
Boil gently for 5 minutes.
Step 5: Combine & Store
Pour hot brine over beets (leave a little space on top).
Seal jars and let cool.
Refrigerate for at least 24 hours before serving.
