Chicken and leek pie

Posted on December 27, 2025

Chicken and Leek Pie is a timeless British savory pie that represents true comfort food. Warm, creamy, and rich in flavor, this pie is loved for its soft chicken filling, gently sweet leeks, and a golden, flaky puff pastry topping. It’s the kind of dish that feels cozy, filling, and homemade — perfect for family dinners, cold evenings, or when you simply want something satisfying and hearty.

In British cuisine, savory pies are more common than sweet ones. For generations, pies have been a practical and delicious way to enjoy meat and vegetables wrapped in pastry. Chicken and leek is one of the most popular combinations because the flavors are mild yet deeply comforting. The leeks add a natural sweetness, while herbs like tarragon bring a delicate, aromatic touch that pairs beautifully with chicken.

This recipe keeps things simple while still delivering restaurant-quality flavor. Using ready-made puff pastry saves time, but the filling is made from scratch to ensure a rich, creamy texture and deep taste.

Why You’ll Love This Recipe

  • Creamy, flavorful filling without being heavy
  • Tender chicken that stays juicy
  • Naturally sweet leeks instead of strong onions
  • Crispy, buttery puff pastry topping
  • Easy to prepare and perfect for make-ahead meals

Ingredients

  • 1 lb chicken (breast, thighs, or a mix), diced
  • Salt and black pepper, to taste
  • 2 leeks, cleaned and sliced
  • 1 garlic clove, finely chopped
  • 1½ tablespoons butter
  • ¼ cup dry white wine
  • 2 tablespoons all-purpose flour
  • 1 cup chicken stock
  • 2 tablespoons fresh tarragon (or thyme/parsley)
  • ½ teaspoon Dijon mustard
  • ¼ cup sour cream
  • 1 sheet puff pastry
  • 1 egg (for egg wash)

Step-by-Step Instructions

1. Prepare the Oven

Preheat your oven to 400°F (200°C). Lightly grease a baking dish about 10 x 7 inches and set it aside.

2. Cook the Chicken

Season the diced chicken with salt and black pepper.
Heat half of the butter in a pan over medium-high heat. Add the chicken in batches and sear until lightly golden on all sides. The chicken does not need to be fully cooked at this stage. Remove and set aside.

3. Cook the Leeks

Lower the heat to medium-low and add the remaining butter. Add the sliced leeks and cook gently until soft and silky. Stir occasionally and be careful not to brown them, as leeks cook more delicately than onions.

4. Build the Sauce

Add the chopped garlic and cook for 30 seconds until fragrant.
Pour in the white wine to deglaze the pan, scraping up all the flavorful bits from the bottom.

Sprinkle in the flour and stir well to absorb the butter and thicken the sauce. Slowly add the chicken stock, stirring continuously until smooth.

Add the Dijon mustard and chopped tarragon.

5. Finish the Filling

Return the chicken to the pan and stir everything together. Let it simmer briefly, then remove from heat and gently stir in the sour cream. The filling should be creamy, rich, and well balanced.

Assembling the Pie

Pour the chicken and leek filling into the prepared baking dish.
Cut the puff pastry slightly larger than the dish and lay it over the top. Fold the edges inward and press with a fork to seal.

Cut a few small slits in the center to allow steam to escape.
Whisk the egg and brush the pastry generously with egg wash for a glossy, golden finish.

Baking

Place the pie in the oven and bake for 30 minutes, or until the pastry is puffed, crisp, and beautifully golden brown.

Let the pie rest for a few minutes before cutting to allow the filling to settle.

Serving Suggestions

Serve this Chicken and Leek Pie on its own or with simple sides such as:

  • Steamed broccoli or carrots
  • Green peas
  • Mashed potatoes
  • A fresh green salad

Make-Ahead & Storage Tips

  • The filling can be made one day ahead and stored in the fridge
  • You can freeze the filling for later use
  • The unbaked pie can be frozen and baked directly from frozen (add extra baking time)

Final Thoughts

This Chicken and Leek Pie is the definition of classic comfort food — creamy, flavorful, and deeply satisfying. With its flaky pastry top and rich filling, it’s a dish that never fails to impress while still being easy enough for home cooking.
