Ingredients

  • 3 large potatoes (boiled & diced)
  • 2 medium carrots (boiled & diced)

  • 1 cup diced chicken or ham
  • ½ cup pickles or gherkins (chopped)
  • ½ cup chopped onion (optional)
  • 1 cup mayonnaise
  • 1 tablespoon mustard
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 teaspoon lemon juice
  • 1 tablespoon fresh dill (optional, for garnish)

Instructions

  1. Boil potatoes and carrots until tender but firm. Let them cool, then peel and dice into small cubes.
  2. Boil the eggs for 10 minutes, cool, peel, and chop them.
  3. In a large bowl, add potatoes, carrots, eggs, peas, chicken/ham, pickles, and onions.
  4. In a separate bowl, mix mayonnaise, mustard, lemon juice, salt, and black pepper.
  5. Pour the dressing over the salad mixture.
  6. Gently mix everything together (don’t mash the potatoes).
  7. Cover and refrigerate for at least 2 hours for best flavor.
  8. Garnish with fresh dill before serving.
